Chicken Fry
Ingredients
250 gms chicken
20 gms onion
2 green chilies
5 gms red chilies
10 gms each, ginger and garlic
5 gms each, peppercorn and cumin seeds
1 tsp vinegar
100 ml oil
Salt, to taste
Method
Grind together onion, green and red chilies, garlic, ginger, pepper and cumin to make a smooth paste. Add vinegar. Marinate chicken in a mixture and set aside for an hour. Shallow-fry chicken over low heat until tender.

Ingredients
250 gms boneless chicken
½ tsp ginger-garlic paste
1 tsp lemon juice
5 tsp each, youghurt and cream
3 tsp chopped garlic
½ each, cumin powder, kasury methi,
chaat masala and garam masala powder
Salt, to taste
50 gms butter
Method
Marinate chicken with all ingredients, except butter and chaat masala, for 15 minutes.
Skewer the chicken pieces and grill in the oven for 10 minutes. Apply melted butter on chicken pieces. Remove the chicken pieces from skewers and sprinkle chat masala on top.
Serve hot with min chutney.

Ingredients
200 gms chicken wings
20 gms achar masala (bottled0
50 gm ginger- garlic paste
50 ml corn oil
50 gms yoghurt
1 tsp red chilli powder
10 ml lemon juice
Salt, to taste
Method
Clean and trim the chicken wings. Marinate in a mixture made of the remaining ingredients and refrigerate for an hour. Arrange in a greased backing tray and grill in the oven for 10-15 minutes till the chicken is done. Serve garnished with the fresh coriander leaves and lemon wedges

Tandoori Chicken (Cooking Recipes) پکوان – Chicken Recipes – مرغ
Ingredients
600 gms chicken fillets, cut into 1 inch cubes
2 tsp ginger-garlic paste
1 tsp cumin powder
3 tsp mustered oil
1 cup yoghurt
Salt and white pepper powder, to taste
11/2 tsp rock salt
2 tsp lime juice
Butter, for basting
Method
Apply salt, pepper, rock salt and lemon juice over the chicken and keep aside for 30 minutes.
Blend together remaining ingredients and coat the chicken with the mixture. Keep aside again for at least four hours.
Thread the chicken on the skewers, leaving gaps between each piece. Cook the chicken in a pre heated oven at 250C for about 10-15 minutes, baste it with butter and cook it for another 15 minutes or until the chicken is cooked.
Serve with mint chutney

450 gms boneless chicken, cut into strips
¼ tsp turmeric powder
1-1/2 tsp red chili powder
2 tsp vegetable oil
1 onion, chopped
3 garlic cloves
2 tsp ginger, minced
1 tsp coriander powder
½ tsp cumin powder
1 tomato, chopped
1 green bell pepper, sliced
1-1/2 tsp tomato paste
1 tsp garam masala powder
Chopped coriander leaves & julienned ginger, for garnish
Salt, to taste
Method
Marinate chicken in salt, turmeric and chili powder and let’s stand for 20 minutes.
Heat oil in a skillet. Saute onion, garlic and ginger for 2 minutes, stirring constantly. Add marinated chicken and cook on low heat for 10 minutes. Stir in coriander, cumin, tomatoes and bell pepper. Cover and cook for about 10 minutes, adding a little water for if needed.
